"Hi, our names are Erik and Jennifer Spersrud. I was sick for over 38 years before being diagnosed with Celiac Sprue Disease. I first noticed something wasn't right when I was twelve years old. My mother took me to a doctor and they did a GI series. I was put on Maalox and then the other symptoms started: I was running to the bathroom with diarrhea during mealtimes and eventually began suffering from sharp pain in my neck and back.

"Years went by with these debilitating discomforts. Then the doctors decided I had acid reflux and put me on medication. Then in August, 2004, I began having chest pains. I went to the doctor for a checkup. When my blood work returned to the doctor, he contacted my husband and insisted that I go the hospital ASAP. My hemoglobin count had dropped to a level four and they told me I was not getting enough blood to my heart.

"I had been bleeding internally, and lost three pints of blood. They performed a transfusion and began a round of testing. I was in the hospital for six days. Finally, they did a scope and performed a biopsy. Tissue samples showed that I had Celiac Sprue disease. All these years, I had been suffering from a reaction to gluten. Gluten was poison to my body.

"Celiac Sprue symptoms include bloating, stomach cramping, diarrhea, constipation, joint pain, numbness and/or tingling in my arms and legs, itching skin lesions, constant unexplained fatigue, frequent headaches or migraines. If you have these symptoms at least once a week during the past three months, go to your doctor and get a blood test.

"Once we knew the problem, my husband and I set about to create a gluten free lifestyle. Seeing the joy it has brought into our lives with my increased health and strength, we decided to share what we have learned in this process by writing 'Everything You Want To Know . . .' that show others how much they can eat and enjoy life even on a gluten free diet. The book tells you about food to buy, stores to shop at, and restaurants to eat at. Now that I know what was causing my condition, I am doing much better after simply changing my eating habits.

"I am really enjoying life, and you can, too. In 2008, we will have gluten free labels on all food products as the market adjusts to better inform the consumer. Celiac Sprue disease is an autoimmune disorder that affects one in every 100 people. 97% of the population suffer with the symptoms and go undiagnosed. Change your life, like I did, and be happy.
